Looking for a sweet treat but want to keep it low in calories and carbs? This low-carb cinnamon bread is a light spin on your traditional cinnamon quickbread. With about 15 minutes of prep time and 15 minutes of cooking, you can have a healthy alternative to higher calorie breakfast breads in about 30 minutes.
This recipe serves 6.
Ingredients:
Wet:
- 3 Egg Whites
- 85g Fat-Free Plain Greek Yogurt
Dry:
- 3⁄4 c. Almond Flour
- 1 tbsp ground psyllium husk powder
- 2 1⁄4 tsp. Baking Powder
- 3 pinches salt
- 1 tsp. Ground Cinnamon Sugar
- 1 tbsp. Sugar-Free Maple Syrup
- Non-Fat Cooking Spray

- Small mixing bowl
- Large mixing bowl
- Baking Pan
- Kitchen Scale
- Spatula
- Spoon
- Fork
- Liquid and solid Measuring Cups
- Wisk
Directions:
- Preheat the oven at 375-degrees F. Lightly spray the baking pan with non-fat cooking spray.
- Combine all of the dry ingredients into a small mixing bowl.
- In a large bowl, wisk the greek yogurt into the egg whites.
- Add spoonfuls of the dry ingredients to the wet ingredients. Mix until smooth.
- Pour the batter into the baking pan.
- Bake for 10-15 minutes or until the batter is fully cooked.
- Let sit for 5 minutes. Top with the Sugar-Free Maple Syrup and additional Cinnamon/Cinnamon Sugar.
