Looking for a sweet treat but want to keep it low in calories and carbs? This low-carb cinnamon bread is a light spin on your traditional cinnamon quickbread. With about 15 minutes of prep time and 15 minutes of cooking, you can have a healthy alternative to higher calorie breakfast breads in about 30 minutes.

Ingredients:

Wet:

  • 3 Egg Whites
  • 85g Fat-Free Plain Greek Yogurt

Dry:

  • 34 c. Almond Flour
  • 1 tbsp ground psyllium husk powder
  • 2 14 tsp. Baking Powder
  • 3 pinches salt
  • 1 tsp. Ground Cinnamon Sugar
  • 1 tbsp. Sugar-Free Maple Syrup
  • Non-Fat Cooking Spray

  • Small mixing bowl

  • Liquid and solid Measuring Cups

Directions:

  1. Preheat the oven at 375-degrees F. Lightly spray the baking pan with non-fat cooking spray.
  2. Combine all of the dry ingredients into a small mixing bowl.
  3. In a large bowl, wisk the greek yogurt into the egg whites.
  4. Add spoonfuls of the dry ingredients to the wet ingredients. Mix until smooth.
  5. Pour the batter into the baking pan.
  6. Bake for 10-15 minutes or until the batter is fully cooked.
  7. Let sit for 5 minutes. Top with the Sugar-Free Maple Syrup and additional Cinnamon/Cinnamon Sugar.
